Roast sea bass with Thai style marinade

This particular dish is a great dinner party dish and a good way of impressing people with very little effort. I first tried this dish when travelling around Thailand many years ago and I loved the fragrant flavours of the dish. Like many Thai dishes the execution is simple, the only complexity is ensuring you have the right flavours; a combination of hot, sour, salty and sweet.


1 whole sea bass cleaned and gutted - your fish monger will do this for you

Marinade
50ml dark soy sauce
10ml fish sauce
Juice of 2 limes
5g fresh ginger finely grated
1 stick lemongrass finely grated
10g palm sugar/brown sugar
1 red chilli sliced thinly
10g coriander finely chopped
5 fresh lime leaves roughly chopped

Mix all the ingredients for the sauce together in a small bowl 
Place the fish in a baking dish and drizzle over the sauce, allow to marinade for 15 minutes
Do not marinade any longer as the lime juice and sugar will start to cook the fish

To cook on the BBQ
Set the BBQ up for indirect cooking and temperature at 190c
Cook the fish for 20 minutes or until the eyes have become opaque and you can remove the fins easily or the core temp is 70c

Oven cooking
Place in the oven at 190c (normal) 180c (fan) for 20 minutes or until the eyes have become opaque and you can remove the fins easily or the core temp is 70c


Garnish with chopped coriander and serve with steamed rice
