Pimms Dutch style
Who doesn't like a refreshing glass of Pimms on a warm summers day? For me it's the quintessential summer drink, I like to kick off a picnic or BBQ with a glass of this. Everyone has their own recipe and I'm no different. When I moved to the Netherlands I thought I might add a Dutch touch to my Pimms recipe with genever instead of gin. I think it works quite well. I use a jonge genever which has a nice fragrant back note and a rounder flavour which combines well with the Pimms aromatics. But who am I to tell you, why not give it a try for yourself.
Serves 6
300ml Pimms
1l lemonade
100ml Genever
60ml Cointreau
6 slices cucumber
6 strawberries sliced
Half a lemon sliced
3 sprigs of mint (this is optional/banned in our house as my other half hates the stuff)
Mix the Pimms, lemonade, cointreau and genever in a jug and add the fruit
Place the jug in the fridge for a few hours to let the fruit infuse in the Pimms before serving
Serve with ice
