Mango, coconut milk and kaffir lime ice cream

I love Asian flavours, mango and coconut being some of my favourites and kaffir lime just adds that little bit extra to the mix. This recipe reminds me of the kulfi style ice creams you got in Indian restaurants. It's not traditional kulfi style but marries the flavours that I remember so well from the dessert menus. This is one of the many recipes that I've been churning out (pardon the pun!) during my testing on the Magimix Gelato Expert.

To get the most out of the recipe, ensure you use a very ripe mango as it will be at it's sweetest.You may need to add a little sugar syrup to the mix as you need to over sweeten otherwise it loses some of it's flavour during the freezing process. If the mango is very sweet then you may not need it at all, so it's optional. 

1 Mango peeled and stone removed (about 250 - 300ml puree)
400ml coconut milk
20ml sugar sryup (optional)
8 frozen kaffir lime leaves defrosted

Roughly crush the lime leaves to release the natural oils
Pour the coconut milk into a bowl and add the crushed lime leaves 
Puree the mango in a blender or food processor and pour into a separate bowl 
If using the sugar syrup, then add to the puree and stir though
Place both bowls in the fridge for at least 6 hours
Get your ice cream maker ready and turn on the refrigeration unit to allow the bowl to cool
Take the bowls out of the fridge and strain the coconut milk through a sieve into the mango puree and stir well to combine
Set on ice cream function and pour in the ice cream mix
This is best served straight away
It will keep in the freezer, but owing to the high fruit content it can crystallise slightly
